8. Sauces and herbed butters

This is why the ketogenic diet is not hard for my husband and me – I make some great sauces !

Hot sauces ( cold sauces are below)

  1. Alfredo sauce
  2. Borsin cheese sauce
  3. Dijon sauce
  4. Gorgonzola sauce
  5. Hollandaise sauce
  6. Hot wings sauce
  7. Spaghetti Sauce

HOT – make varied combinations of the following:

1. Alfredo sauce – cook all together until it thickens and add cream to thin if needed

  • 4 oz cream cheese
  • 1/2 c broth
  • 1/2 c cream
  • 1/2 c Parmesan

2. Borsin  cheese sauce

  • Borsin cheese 1/2 pkg
  • Cream 1 c

3. Dijon sauce

  • sour cream
  • 1 tsp Dijon mustard
  • anchovy paste
  • capers

4. Gorgonzola sauce

  • after finish pan frying any meat add:
  • cream cheese
  • some broth (I have little cupcake size pieces of frozen broth in freezer)
  • crumbled Gorgonzola cheese

5. hollandaise sauce– heat over very low heat or double boiler and stir constantly

  • 4 oz butter
  • 3 egg yolks
  • 2 T lemon juice
  • dash thyme.
  • optional is to cook 1 T minced onions + 2 T wine first, then whip in a few egg yolks and melted butter

6. Hot wings (fry, bake or convection oven cook wings)

  • melted butter
  • Franks hot sauce.

7. Spaghetti sauce – buy Raos homemade spaghetti sauce (available at most grocery stores) and mix half spaghetti sauce and half heavy cream

COLD  SAUCES

  1.  BBQ sauce
  2. Caesar salad dressing
  3. Fish sauce – lemon
  4. Ranch dressing
  5. Tartar Sauce

1. BBQ sauce – simmer, then cool and refrigerate

  • 3/8 c cider vinegar
  • 15 oz can tomato sauce
  • 3 T Worcestershire
  • 1 1/2 T yellow mustard
  • 3/4 tsp Franks hot sauce
  • 3/4 tsp salt
  • dash cayenne pepper
  • 3 T lemon juice
  • few drops liquid smoke
  • 1/2 dropper of liquid stevia

2. Caesar Salad dressing

  • 1 c olive oil
  • 1/4 c water
  • 2 T lemon juice
  • 1 T vinegar (any type)
  • 1 tsp salt
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 large egg yolk
  • 1/4 tsp pepper
  • garlic
  • 1/4 c parmesan

3. Fish sauce – lemon

  • 2 parts mayo
  • 1 part sour cream
  • lemon juice
  • Dijon
  • dill

4.Ranch Dressing:

  • 1/2 c sour cream
  • 1 c mayo
  • 1/2 c cream
  • 1/4 c red wine vinegar
  • 1 garlic
  • 2 tsp Worcestershire sauce
  • 1 1/2 tsp fresh chives
  • 1 1/2 tsp fresh shallots
  • 3 tsp Dijon
  • 1/2 tsp salt & pepper
  • pinch cayenne

blend in blender then refrigerate covered.

5. Tartar sauce:

  • 1/2 c mayo
  • 1 tsp  yellow mustard
  • tobasco sauce to taste
